[RECIPE] Classic Holiday Stuffing with Gluten-free Bread

Classic Holiday Stuffing

It’s a time of feasting and festivities as loved ones get together to celebrate the holidays. Here’s a healthy recipe for the holidays so you can enjoy without the guilt!

Classic Holiday Stuffing

Ingredients for 4 servings

  • 6 Pieces of gluten-free bread (EnerG Brown rice loaf, or alternatively use Choice Bread (formerly Choice Cooperative) which is available at Eat Fresh)
  • 2 x fresh fennels, or 1 ½ – 2 cups of onions
  • 2 x shallots
  • 4 cloves of garlic
  • 2 medium sized carrots
  • 2 stalks of celery
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 Tbsp dried sage (can be found in Spicebox Organics)
  • 2 Tbsp dried thyme (can be found in Spicebox Organics)
  • 1 Tbsp dried parsley (can be found in Spicebox Organics)
  • 1 tsp Himalayan pink salt
  • ½ tsp ground black pepper
  • ½ cup dry white wine (Sauvignon Blanc is recommended)
  • Handful of fresh parsley
  • 1 cup vegetable broth
  • 3 Tbsp extra virgin olive oil

Directions

  1. Pre-heat the oven to 180c and toast the gluten-free bread for 3 – 4 minutes
  2. Take the bread out and cut them into small cubes (best to cut each piece of bread into 9 squares), set them aside and let it stale
  3. Chop up all the ingredients finely (fennels or onions, shallots, garlic, carrots, red and green bell pepper and a handful of fresh parsley)
  4. Place each chopped ingredients into separate bowls
  5. Measure and put dried sage, thyme, dried parsley into a separate bowl
    (By this time you should still have around 65 minutes for the bread to stale, coat your baking pan slightly with olive oil and set it aside.)
  6. Around 15 minutes before the time required for staling of the bread, pre-heat the oven to 240c
  7. In a large pot, add in olive oil and let it simmer under medium heat/fire; when oil is hot, add in garlic, shallots or onions, carrots and celery and stir them around until they are soft and slightly brown
  8. Add in the red and yellow bell pepper, and stir them together until the peppers are soft as well
  9. Add in the bowl of dried herbs, salt and black pepper to the pot and stir it for another 2 – 3 minutes
  10. Add in ½ cup of dry wine; continue to cook until the liquid is reduced to half
  11. Turn off the heat/fire, add in the stale gluten-free bread and add in the vegetables, vegetable broth and chopped fresh parsley
  12. Transfer all the ingredients in the pot to your baking pan, bake for 25 – 30 minutes until it is golden brown. I would suggest that you check the oven at the 20-minute mark to make sure that it is not burnt.
  13. After 25- 30 mins, the classic holiday stuffing with gluten-free bread is ready to be served, enjoy!

Serving Suggestion

The stuffing goes really well with mashed potatoes so you may want to add potatoes in with the stuffing. Your guests or family would certainly love this, even if they do not usually enjoy vegan dishes.
